Seven courses, one arc
The tasting menu plays like a setlist: light openers, a smoky middle and a slow finish. Two and a half hours, seven courses, one optional wine pairing.
Overture
Oyster, crudo and a glass of sparkling. The lightest movement of the night.
From the water
Charred prawns and a whole-fish course split for the table, with textured white.
Into the fire
The dry-aged rib-eye course, carved at the pass, poured with aged shiraz.
The slow finish
Smoked chocolate at the pass, then a fortified pour to close the set.

Every dish on the signature grid lists its source. Beef is single-station Riverina, seafood is Sydney Fish Market day-boat where possible, and native ingredients come from Australian growers we name on the menu.
