Our wine list runs to 400 bottles, most of them Australian. The tasting is the sommelier's answer to the question every guest asks: where do I even start? Six pours in ninety minutes, moving through the regions and styles we pour most, with cheese and charcuterie built to show why the pairings work.
The room is private and the group is small, so questions are the point. You leave knowing which Barossa shiraz you actually like, why Tasmanian chardonnay keeps showing up on serious lists, and which bottle to order when you come back for dinner.

Four stages, no guessing
Welcome pour
The session opens with a sparkling pour and a quick map of the regions you are about to visit in the glass.
Whites and aromatics
Two cool-climate whites, typically a Tasmanian chardonnay and a Clare Valley riesling, paired with soft cheese.
The reds
Two reds that show what Australia does best: a medium-bodied Yarra pinot and a structured Barossa shiraz, with charcuterie.
The finale and the list
A fortified or aged pour to finish, then a walk through the list so you know exactly what to order next time.
Before you book
Tastings are adults-only and run to a fixed start time. Private sessions for corporate groups and celebrations can be arranged outside regular hours.
