Clarity is the new garnish
The dominant trend across Sydney bars this year is clarification: milk-washed punches, centrifuged citrus and crystal-clear drinks that taste like nothing the glass suggests. Our version is a clarified native lime and coconut highball that looks like water and drinks like a daiquiri's smarter sibling. Guests order it once out of curiosity and then all night.
The second shift is savoury. Tomato water martinis, olive-brine sours and drinks built around miso and native pepperberry are outselling the sweet signatures that dominated five years ago. Sydney palates grew up, and the menus followed.
The classics refusing to die
Through all of it, the three drinks we sell most remain the Negroni, the Margarita and the Old Fashioned. Trends move the edges of the menu, but the centre holds. What changed is the specification: guests now ask which mezcal, which amaro, whether the ice is a single cube. The drinks stayed the same; the conversations got better.
